When I came home with a 25 pound box of peaches yesterday, I think Alex thought I was crazy. But they’re all done. With big thanks to my best friend Karen (who came up with the idea of giving me canning supplies for Christmas last year and volunteered to help me learn) we made one batch (6 half pint jars) of garlic-basil jelly and canned all the peaches. I ended up with 30 jars of peaches!
Do you see all those jars?? I even got the kitchen cleaned up before I crashed on the couch (thankfully we just had leftovers and I didn’t have to cook dinner). With a little luck, I’ll find a store that as jars in stock and I’ll can pears on Thursday. I’m still hoping to try some pickles too and maybe something else, like a pie filling, or a salsa? Any suggestions?
